Mushroom Salad

Mix the sliced mushrooms and parsley in a large bowl. In a small bowl, whisk together the oil and lemon juice until well blended, and then add salt and pepper to taste. Pour the oil mixture over the mushrooms, and toss until all the ingredients are well coated. Add the shave the Parmesan on top. Lightly toss and serve.

4 cups Four island’s mushrooms   3/4 flat leaf parsley leaves (fresh, stems removed)    Freshly ground black pepper    1/2 cup Four island’s virgin olive oil (extra-)    1/2 cup fresh lemon juice    Salt   3/4 Cheese
